SRI LANAKAN DEVILLED CHICKEN

Where the hell chicken was gone..?? Don’t worry, I deep-fried and devilled it. is there any Sri Lankan fried rice, special menu, party table without devilled chicken. I guess no. this is one of the easiest and delicious chicken recipe. Just deep fry your marinated chicken and sauté with all the sauces, onion, garlic and banana peppers for the final touch. Hello….!!!! You cannot have your fried rice without devilled chicken. Come get the recipe. 

1.clean and wash 500g chicken pieces, use any part but with bones. 

2.marinate your chicken with 1tbs vinegar, salt, 1/2tbs chilli powder, 1/2tsp turmeric powder. Cover with a cling wrap. Leave at least 1-2h to marinate your chicken 

3.heat a bottom down pan with generous amount of oil to deep fry your chicken. Fry small portion at a time and directly place on a paper towel to release the excess oil. And continue with the rest. 

4.heat a pan/wok with 2tbs oil and add 2 sliced garlic cloves, 1 inch size chopped ginger piece and sauté. 

5.add a piece of pandan leaf, some curry leaves and largely diced 1 medium red onion, 2 sliced banana peppers. Fry couple of minutes and add 1 diced large tomato. Sauté. 

6.add 3-4tbs tomato ketchup, 1tbs soya sauce, 1/2tbs sugar and give it a good mix. Do everything quickly and don’t cook your onion and banana peppers completely. They need to nice in colour and crunchy. 

7.finally add deep fried oil drained chicken with pinch of salt to the pan and mix until all the pieces are well coated with sauce.  

8.for extra spiciness sprinkle some dried chilli flakes at the last minute and sauté well.
