
Did I mention that this is about one pot chicken and gnocchi soup? Yes…..!!!! one more soup recipe on this fall season. Because fall is all about comfort food and nothing is comfort than a delicious bowl of soup. This one pot chicken and gnocchi soup is what actually we need. Cooked chicken around 60-70 minutes with veggies and shredded, added gnocchi to the same pot and cooked. Packed with loads of flavours and absolutely comforting. Used skinless chicken thighs but you could use any meaty part. As most of the time, my soups are diary free. Because I love to enjoy my soups without any cream, milk. But if you prefer sprinkle some grated Parmesan over your soup bowl. .
1.heat a pot with 1tbs olive oil and add finely chopped 1 scallion and sauté. Add minced 1 garlic clove and mix. Add chopped 1 large carrot, 1 medium celery stalk and sauté couple of minutes.
2.add skinless 500g chicken thighs and sauté with veggies couple of minutes.
3.add 1l water with salt and 1/2tsp Sichuan peppercorns. (Use even black peppercorns also) bring the broth to boil and fire down and cover. Slow cook around 60-70 minutes.
4.fire off, remove the chicken parts and shredded using a fork. Add again to the broth and bring it to boil.
5.add 400g gnocchi to the broth and cook around 5-7 minutes.
6.sprinkle some dried red chilli flakes and freshly chopped green onion
