GNOCCHI WITH BELL-PEPPER SAUCE

Gnocchi is one of the fresh pasta, generellay made out from  boiled potatoes and flour. There are many more different flavours of gnocchi, but potato gnocchi are rich in more flavours. Bought a fresh gnocchi from a store  and made a creamy, sweet and light spicy sauce from red bell peppers and cherry tomatoes with the touch of some mint leaves. One of the delicious homemade pasta condiment, sauce that I did. 

1.heat your pan/wok with 2tbs olive oil in medium heat. Add 1 small diced onion and sauté couple of minutes until translucent. 

2.add roughly diced 1 large bell pepper and sauté with onion 2-3 minutes and add quartered 10 cherry tomatoes and sauté more 3 minutes in medium heat. 

3.add salt and pepper on your taste and mix. Add 1 cup of water and 5-6 mint leaves. Cook in low heat with a lid, around 12-14 minutes until everything soft. 

4.blend the cooked sauce from immersion blender and add 2-3tbs freshly grated parmesan cheese and cook more a minute in low heat while stirring. 

5.add 500g fresh gnocchi cooked according to the package instructions and mix with the sauce in low heat until all the pieces are well coated. 

6.serve with more freshly grated parmesan cheese.
