
Fried rice is not a new thing to we Sri Lankan. As we growing up eating rice and curry, we all enjoyed fried rice at least once a week. No matter its homemade or from out. Fried rice are what we all wanted on weekend or special day when we were kids. If you go through my feed you’ll see I’d shared veggie, chicken, squid, egg fried rice. But how did I missed Sri Lankan version of “mixed fried rice” if you noticed my feed, I’m far away from beef. All my recipes are free from beef. But if you are able to, love to eat beef just add small chunks of fried beef as the same amount of other meat. And just continue with the rest.
And if you are a Srilankan or if you can find “samba rice” please use it, instead of basmati. Because in Sri Lanka, the main ingredient of the fried rice is good quality samba rice. More than basmati rice, samba rice gives more flavour, richness and its so beautiful to see even. Wash thoroughly in a cold running water. Cook as how you cook normally.
And the other important point when you cook fried rice is, always try to use leftover rice. If you are planning to cook fried rice for lunch cook your rice day before, if you are planning to cook for dinner, cook your rice morning. Because leftover rice are more fluffy than what you cook at the moment. They easily separate from each grain and gives a nice look.
Currently I’m running out of my Chinese chilli paste. If you could use Chinese chilli paste instead of dried chilli flakes, without any regret use it.
Attention on while frying squid/cuttlefish. Because they are blasting. Always use a safe way to fry your stuffs.
1.cook 2cups of basmati rice.
2.heat a wok/bottom down pan add 3-4tbs oil. Once the oil is well heated, start to fry your meat. Starts with any meat you prefer, when they are brown remove from the pan and continue with the rest.
3.fry your prawns. This may take just couple of minutes and remove from the pan.
4.at last fry your squid/cuttlefish. Use a safe way to fry. And remove from the pan.
5.as how we used few tablespoons of oil to fry, we don’t have much oil remaining in the pan. So into the same hot pan with oil add small diced 2 hotdogs, fry couple of minutes. push the hotdogs to one corner and crack 2 eggs the pan, scramble and mix with hot dogs.
6.add finely chopped 3 garlic cloves, finely chopped 2 inch size ginger piece and fry with hotdogs and egg about 30 seconds.
7.add 2 medium julienne carrots, thinly slice 1 medium leek (green part only) with all the fried meat and seafoods. Sauté everything couple of minutes. Don’t over cook your veggies, will be soggy and discoloured.
8.sprinkle 2tsp dried chilli flakes, salt, 1tsp ground black pepper and mix well.
9.i always prefer to fry my rice in two badges, its so easy and will be rich in more flavours, so take out half of the meat and veggie mix from the pan and leave aside.
10.add half of the cooked rice to the pan and mix with meat and veggies in high heat. Add 1tsp oyster sauce and 1tsp light soya sauce and fry until nice and brown.
11.transfer the cooked fried rice to a bowl and do the same with the rest.
Now you have your own mixed fried rice…….
