RED SOUP

Isn’t it comfort to have a bowl of red soup in this cold weather. it’s been a while since I shared my soup recipe and here me again with delicious tomato and red bell pepper soup. I used chicken broth for my soup, but if you are a vegan/vegetarian one, use some vegetable broth to comfort yourself. Something so simple but still delicious. I know you all gonna love this and feel free to comfort yourself during this cold season. 

1.halve 3 medium red tomatoes, roughly slice 1 medium red bell pepper, dice largely 1 medium onion, 3 garlic cloves. Place everything on a baking sheet pan and drizzle 1tbs olive oil, 1tsp dried oregano. Roast in pre heated oven around 20-25 minutes in 180C. 

2.put the roasted veggies and 1tbs tomato concentrate to the pot along with 600ml chicken broth and bring it to boil in medium heat and fire off. 

3.blend the veggies into a creamy purée. Season with salt and pepper and re heat in low heat until it starts to boil. 

4.sprinkle some freshly grated Parmesan cheese and stir. Serve hot with some bread slices
