
Who doesn’t love pancakes? this is not the one that the whole world knows, I mean those fluffy pancakes. But these are mostly look like crêpes. The difference is we use coconut milk instead of fresh milk. And the filling. Mostly crêpes are filled with chocolate cream or something similar like that. But Sri Lankan Pancakes are filled with caramelised coconut. Freshly scraped coconut are caramelised using treacle and some spices such as cardamom and cloves. But my mother never used those spices while she caramelising coconut. Just freshly scraped coconut and good quality treacle. (But i used coconut treacle) these are the best snack what I had as a little girl. My mother used to make these for evening tea time. Enjoying every single bite of these while watching a cartoon and having the most delicious ginger infused Ceylon tea is the best evening I ever spent. .
1.to make caramelised coconut AKA panipol. Heat 1cup of treacle, I used coconut treacle. Bring it to boil and add 2cups of freshly scraped coconut with pinch of salt and mix well. Cook in low heat about 3-5 minutes while mixing. Fire off and keep aside.
2.to make pancakes…. into a large mixing bowl add 2eggs, 1/4tsp of turmeric powder, pinch of salt, 1tbs sugar and 5tbs of melted butter. Whisk well and add 2,1/4cups of flour and combine altogether.
3.add 2cups of coconut milk to the flour. Don’t add at once, add gradually and combine. If need add more . Make a thick pancake mixture.
4.heat a nonstick pan and pour some tablespoons of batter, spread over the pan in circular shape. Cook bottom side and gently flip to the other side and cook.
5.spread some panipol over the pancake and roll. .
Serve with good cup of tea or coffee and enjoy your evening….!!!
