One more party appetiser for the blog. These are also highly see in party/special meal table. Normally fried patties are famous in Sri Lanka. But preferred to share one of my bake version here. Fish patties are what mainly famous in Sri Lanka, but here I used ground chicken as my filling.
Fish are what I always found in my patties when I was little, but my mother one day told me, when she was little, my grandma always used ground meat for her patties. So thought to use ground chicken. If you prefer use any other ground meat also.
As we consider these as party food/short eats. Make little bit bigger, so you can serve as your breakfast, lunch, dinner. Make big batch and freeze, thaw and egg wash bake in a pre heated oven. It’s very important to egg wash your patties before bake to get this golden yellow colour. And also you could simply deep fry these. but I always prefer baked version. in this recipe I used some eggs for my Pattie dough for extra smooth. and here I used chicken but you could simply use any kind of meat you prefer.
1.heat a pan over medium heat and add 2tbs olive oil. Add finely chopped 1 small onion and cook until translucent.
2.add 2 minced garlic cloves, 2 finely chopped green chilies, finely chopped some curry leaves and fry about a minute.
3.add 450g ground chicken and mix with herbs. Break using a fork and cook until its pink turn into a light brown. Around 7-10 minutes. Add 1tbs chilli powder, 3/4tsp curry powder, 1/2tsp ground black pepper and salt. Mix well.
4.add boiled 2 medium potatoes. Mashed or diced. And mix. And grated 2 small carrots and 100g frozen green peas and cook more 3-5 minutes. Fire off and leave aside.
5.into a food processor add 500g flour, 1/4tsp salt, 85g cold butter, 2 eggs and combine all. Add cold water little by little and make a rough dough. For me it was around 1/2cup cold water.
6.Mix more 30 seconds and transfer the dough to a flour dusted working board. Knead more 5-10 minutes and wrap the dough with cling wrap. Refrigerate around 90 minutes.
7.halved the dough and wrap the other half again, place in the refrigerator, sprinkle some flour over the working board and flatten the dough.
8.Using a circular cutter, cut some shapes and place some curry at the centre. Fold the edges to seal, tight using finger tips and use a fork to seal completely.
9.place the patties over a baking tray lined with a parchment paper. Beat a egg well and egg wash your patties and bake in a pre heated oven around 25-30 minutes in 180C.
