
Whenever I have pork ribs i used to bbq them. But not using bbq stove, I just use my pan and gas stove to do it. Already shared the recipe in my IG feed. Planning to share it on my blog too. But this time used these pork ribs to make a delicious curry. I’m not the one who loves pork fat. So whenever it is pork curry I used pork loin for my Sri Lankan pork curry with less fat. But this time I chopped pork ribs and saved some fat on it, seared with it’s own fat and cook with Sri Lankan spices and herbs. Guys, it turns out perfectly, absolutely delicious and mouthwatering curry. This curry already stole my heart. somebody please bring me some good Sri Lankan “roast pan” to dip here

1.I got around 1350g pork ribs. Cut into chunks and wash well. I cut away the excess fat, but if you prefer save it.
2.heat a pot with 2tbs oil and add the washed pork ribs chunks and fry from oil and it’s own fat until they are lightly golden.
3.once pork ribs are golden, remove from the pot. Into the same pot with pork fat add finely chopped 1/2 small onion, 2 minced garlic cloves, 1inch size chopped ginger, 2 split green chilies, small piece of pandan leaf, some curry leaves, cinnamon stick, 3 cardamom pods. Fry in medium heat until fragrant.
4.add 2tsp chilli powder, 1/4tsp turmeric powder and salt.mix with aromas.
5.add pork ribs and 2 pieces of goraka/ garcinia Cambogia mix all together until well coated with spices and aromas. Add 1/4cup water, cook in low heat 10-12 minutes.
6.add 200ml thick coconut milk and stir well. Cook in medium heat and bring it to boil. Simmer 14-18 minutes in low heat and fire off. .
