TOMATO TORTELLINI SOUP

Fall season has already started, just wonder how did I miss my soups? It’s a lazy day with heavy wind outside and thought of making a delicious creamy tomato tortellini soup. Soup for lunch….

yup…!!! Because need to comfort ourselves 

I got a well grown water spinach pot on my outside and added handful of water spinach to my soup. Could even use spinach, kale instead of water spinach or you could completely skip it. .

1.heat a pot with 1tbs olive oil and add finely chopped 1/2 medium onion, 2 minced garlic cloves. Sauté couple of minutes. 

2.add 1 medium celery stalk, cut into medium pieces, 2 medium carrots, peel and sliced. Sauté along with onion and garlic about 2 minutes. 

3.add 1tbs tomato purée and mix all. 

4.add 1 canned tomato pulp, 400g. And stir well. Add 550ml broth and mix all together. I used veggie broth. But you could use meat broth also. 

5.heat until bubbling in low flame. 

6.add 250g tortellini. I used cheese filled tortellini. But you could use anything. Cook in broth completely and at the last minute throw a handful of water spinach and cook. 

7.serve in hot with some chilli flakes and Parmesan cheese
