Never too late to have a slice of chocolate cake. Right…?

It’s almost winter here and thought it will be good to have a slice of chocolate cake with hot cup of Ceylon tea. Gone with classic simple and main ingredient. Turn out just an amazing chocolate pound cake with some melted dark chocolate on top.
Well….. spent an amazing evening with this delicious cake….

1.pre heat your oven to 200’C.
2.line a pound baking tin with parchment paper. Mine is L31 X P11.5 X H7 cm
3.into a large mixing bowl add 190g butter on room temperature 4 egg yolks, 150g brown sugar. Beat everything around 2-3 minutes and leave aside.
4.into another large mixing bowl add 4 egg whites and beat until just stiff peaks.
5.combine both butter mixture and egg white mixture. Add half of the egg whites to butter mixture and using a spatula fold, repeat with the other half.
6.sift 150g flour, 40g unsweetened cocoa powder and 7g baking powder directly to our previous mixture and fold using a spatula until well combine all.
7.pour the cake batter to our baking tin and bake around 35-40 minutes in 180’C. Make sure to control after pass 30 minutes. insert a toothpick to the centre and if it comes out clean take out your cake. If it is still wet, bake few more minutes. Time will depend on heat of your oven.
8.once the cake is ready, take out of the oven and leave it to cool completely.
9.heat 40ml fresh milk and add 100g chopped dark chocolate to it. Leave about a minute to soft and mix until all get melted.
10.pour the melted chocolate over the cake and serve.
