SLOW COOKED PORK SHANK

what’s your favourite pork shank recipe? Mine is, those slow cooked shanks in IKEA. Yes…..!!! We both love those Swedish meatballs with gravy and slow cooked pork shank in IKEA. No doubt those are the best. 

whenever we were at IKEA, he was asking “when will you cook some pork shank” and “sooner” was my forever answer. It’s been too long he asked this from me. Think he is tired of asking the same. Because I never cooked. Not because I don’t like, but it was really hard to find some time to cook pork shanks. Because it took too much time. And one day I promised to myself sooner and sooner I’m gonna cook it. 

Couple of days ago when I went to butcher shop, saw  those pork shanks. Before change my mind I paid for those. Managed my time to slow cook these with delicious homemade mashed potatoes. Because mashed potatoes are what we always wanted as our side dish. Yes…!! We belong to mashed potato team, and you…?? 

I cooked two shanks exactly 2 hours. 1,1/2h slow cooked in low heat with a lid and 30 more minutes cooked in medium heat with a lid. Until the gravy was thickened. This time may differ from the size of your pork shank and the heat of your stove. 

These days we are under 10’C and this is what exactly we need to comfort ourselves. Comfort food on lazy days. 

1.season 2 pork shanks with salt and pepper. Leave aside. 

2.heat a large pot with 2-3tbs olive oil and place the seasoned pork shanks. Let them to brown each and every side. Once they are lightly brown remove from the pot. 

3.into the same pot add roughly chopped 1 medium carrot, 1 medium onion, 1 medium celery stalk and 1 garlic clove. 

4.sauté the veggies until softened in medium heat. 

5.add 1tbs tomato concentrate to the veggies and mix well. 

6.place the lightly browned pork shanks agin in the pot and pour 750ml meat broth. Give it a stir. 

7.cover with a lid and slow cook in low heat about 90 minutes. If needed cook more 10-15 minutes. You’ll see meat are pulled from the bones. 

8.remove the shanks from the pot and blend the broth with veggies. 

9.replace the pork shanks in the pot, add the blended broth and cook more 30 minutes in medium heat with a lid. Until gravy is thickened. 

10.once the meat is pulled and gravy is thickened fire off and serve with your favourite side dish.
