
Some simple shrimp and smoked pancetta fried rice to fix the Sunday lunch. .
Sunday means mostly RICE for us, after a hectic week finally got a time for myself. Though was planning for good rice and curry, at last changed my mind. Chopped and added those shrimps for rice with some smoked pancetta I had and done with this delicious, lip smacking fried rice.
1.heat a large wok with 2-3tbs oil and add finely chopped 1/2 large onion, 3minced garlic cloves, chopped 2inch size ginger piece, chopped 3 green chilies. Fry 2-3 minutes in medium heat.
2.add 200g diced smoked pancetta fry until they are lightly browned.
3.Add 500g cleaned and chopped shrimps to the wok and fry 2 more minutes with rest of the ingredients.
4.now add 2 large julienne carrots, 100g frozen green peas and sauté with 1,1/2tbs Chinese chilli paste or dried chilli flakes and salt on your taste.
5.meantime Cook 2cups of basmati rice and keep aside. Better if you got day before rice.
6.add the cooked rice to the wok and mix with 2tbs light soya sauce and fry the rice in high heat with other ingredients until well heated And combined completely.
7.at last minute sprinkle some chopped spring onions and mix.
