POL ROTI & SARDINE FISH CURRY

Before you get the recipe, remember here you got two most favourite and famous Sri Lankan recipes together. 

This pol roti is so rich in freshly scraped coconut, nothing else just the traditional pol roti with loads of coconut, flour, salt and water. That’s how the dough was made. 

Usually my mom use some “kalati pol” for pol roti with it’s own water instead of natural water. That’s the most delicious pol roti I ever had, unfortunately its impossible to have some “kalati pol” here. So here this is my pol roti. 

And this “sardine fish curry” or “hurulla curry” is what she exactly do when there is some pol roti, string hopper or some roast pan. How could I miss this curry when I have some delicious pol roti? 

Simple & easy but delicious AF. This is what I really want after a hectic week, hot and spicy homemade Sri lankan dish. 

Here sharing my most favourite two recipes with you. “Pol roti and Small fish curry” 

POL ROTI/ COCONUT ROTI

1.sprinkle some salt to 2cups freshly scraped coconut and mix. Add 1,1/2cup of flour and mix, add water lil by lil to make a soft, sticky dough. Knead the dough well and divided it into equal small portions. Sprinkle some flour over a working surface and flatten them using a roller into a thick round shape. 

2.place those flattened dough on a well heated dry pan and cook your roti until both sides are golden brown. When you see the dark spots on your roti, you know your roties are ready to eat. 

SARDINE CURRY 

1.it was 300g sardine fish. Cleaned and washed. Remove the stomach cavity and head. 

2.Heat a pot with 2tbs oil and add finely sliced 1/2 small onion, 2 sliced garlic cloves, 3 split green chilies, pandan leaves and curry leaves. Fry until they all are fragrant. 

3.add 1/4tsp turmeric powder, 1,1/2tsp chilli powder and salt to the aromas and fry in low heat about 20 seconds. And add the fish and give it a quick fry. 

4.add 1,1/2cups of coconut milk and stir. Cook in medium heat about 12-15 minutes. Bring it to boil, fire off and squeeze a 1/2 lime and stir. 

serve your roti with some spicy homemade “lunu Miris” and and fish curry……!!!!
