
Delicious, moist and rich golden date cake is easy to make and perfect for your tea time or share with your lovelies.
This was inspired by my aunty and completely her recipe. She is the one who always with the baking recipes in our family. And I still remember when I was a little girl, I always awaiting for the evening tea time to have some cakes/buns that she bake. I used to have them straight out from the oven. and I’m the one who sit in front of the oven and calculate the time.
1.soak 400g pitted and chopped dates in 120ml hot water about 15-20 minutes.
2.meanwhile beat 200g butter with 200g brown sugar.
3.add 4eggs. One at a time to the butter mixture and beat well.
4.sift 200g flour and 10g baking powder to the butter mixture and beat couple of minutes.
5.add the soaked dates with water to the batter and mix using a spatula.
6.place the batter into a pan prepared with baking sheet and bake in a pre heated oven about 30-35 minutes in 180c, or your toothpick comes out clean.
7.meanwhile heat 40g butter and 70g brown sugar in a small saucepan in a medium heat and add 100ml heavy cream and bring it to boil and simmer couple of minutes, fire off and let it cool.
8.once the cake is done pour the butterscotch syrup over the cake.
