CITRUS TROUT FILLET

 

Look at those slices of citrus on the trout fillet. I was so excited with this recipe and happily it was something more, more & more delicious way to eat my trout or even salmon. (Next time I will try this with salmon) freshly chopped herbs, Sichuan pepper and other ingredients with citrus fruits are divine. 

Most of the time I cook my trout or salmon fillets in oven with lemon or lime. This time I got more citrus fruits at home and thought I should add all. Little bit excited if this turn out bad, by the way I gave a try with loads of fresh herbs on it. 

1.dry the fillet using paper towel this fillet was around 550g and place it on a baking pan lined with a parchment paper.

2.cover the fillet with sliced citrus fruits, 1/2 lime, 1/2 lemon, 1/2 orange, 1/2 yellow grapefruit. Serve other half of each of the fruits. 

3.chop handful of fresh parsley, thyme and dill. Cover the fillet with fresh herbs and 1tbs olive oil, 1tsp dried oregano, 1tsp Sichuan peppercorns and salt.

4.squeeze the remaining half of all the citrus fruits to the small mixing bowl and whisk with 2tbs olive oil, salt and some chopped parsley for the dressings. pour 3-4tbs over the fillet and save some to drizzle when serving. 

5.bake in a pre heated oven for about 20-25 minutes in 180’C 

6.serve with the remaining dressings on top.
