SPICY JUICY ANNASI

ANNASI is what we call PINEAPPLE in Ceylon. A tropical flavourful fruit. Most of us are like to eat well ripped pineapple, sometime with a touch of little bit of chilli powder and salt or ground pepper and salt on top. Or may be as a mouthwatering spicy tangy sweet Achcharu (Pickle) and sometimes like many drinks/popsicle/ice cream and there are many more ways to eat your Annasi. But how many of you had some spicy juicy Annasi as a curry on your rice bowl…. That’s F delicious. This all about “Annasi Theldala” sautéed spicy juicy pineapple. 

I had mentioned in many posts, we mostly had a rich, lots of curry only on Sunday or any other special days when we were kids. And this curry also belong to that menu. i know not only in our place but most of the Sri Lankan’s cook this on special days. You definitely need some good meat curry or seafood curry with creamy dal or white potato curry to balance the spiciness of this curry. 

I got a half of a pineapple that I bought. one half I used to toss with my salad and the other half was laying in my refrigerator. So I decided to cook it. To cook pineapple cut off the skin first until it looks completely yellow without any single dark spots. Then cut into lengthwise the half you got. Cut off the hard part at the centre. Then halve again lengthwise and cut into small pieces. You’ll have 4 equal shares from one half now. 

1.it was a half a pineapple, skin and hard part of the centre was off. Cut into small pieces and weight around 350g. 

2.heat a pot/sauce pan on medium heat and add 2tbsp cooking oil and heat up. 

3.add sliced 1 medium onion and cook until translucent. 

4.add 5-6 curry leaves, pandan leaf and small cinnamon stick to the pan and fry about a minute.

5.add 1tbsp & more 1tsp dried chilli flakes, salt to the pot and cook about 30 seconds. Add the cubed pineapple and mix with aromas and spices. Coat all the pieces with spices, mix about 2-3 minutes in low flame.

6.add sliced 1 large capsicum to the pineapple and cook about 4-5 minutes in low heat and sprinkle 1/2tsp sugar at the last minute and mix it up.
