
Summer is on the way. And we all miss our refreshing drinks, gelato and granita. This cherry granita was all about my last summer and I badly miss these. Can’t wait to find some cherry in this summer to make my own homemade cherry granita.
This was my first trial on making my own granita at home. Once I was working in a bar in south Italy gotta know about how the process goes but never tried in home until my last summer. Still remember I got these fresh yum black cherry from farmers market during the season for a fair price. Had enough and was thinking about what to with the rest. Then came across with this granita idea. Since I started making these at home, never had a one from stores. Because homemade is delicious than store bought always.
This was a large quantity, so here I used two loaf pans. Because when you scrapped using a fork the pan need more space for scrapped granita. So try to manage the space.
1.into a blender/ food processor add 850g washed and pitted black cherries along with 150ml sparkling water (or you can use normal water) 10ml almond extract and 50g brown sugar. Pulse/blend until smooth.
2.pour into a two medium size loaf pans. Or a baking tray even. But using two pans is easy to work with a fork once it is freeze. It gives more space.
3.freeze for about 4-5 hours and take out from the freezer. Scrape the granita with a fork and freeze again.
4.after pass about another 4-5 hours scrape again with a fork. Freeze for another couple of hours and scrape again.
5.repeat this process at least 3 times before consume.
