
Since my bread turns out well, and I started to believe in myself on my own baking. Now I don’t buy breads from stores.i bake my own bread. And I was craving for some juicy burgers. But still we are under lockdown due to Covid 19. Not a single burger restaurant available near me who delivers some. So decided to make my own burgers. Though I did my burger patties earlier never did these beautiful burger buns before. but I tried making a dough for my seenisambol buns and it was so perfect. just followed it with different amount of ratio and turn out so beautifully. I’m so in love with these and smell.

Although this first attempt went well, did a small mistake. Just a small one which can be corrected. I didn’t wanna hide it here. Because we all learn from our mistakes and wanna share it too. As how I used 400g flour with the rest of the ingredients added around 220ml fresh milk when I was mixing the ingredients. It seems like little bit more liquid. So had do add another 3tbs flour to my mixture. It brought my dough to normal. So whenever your dough looks more sticky add some flour and if it is more dry add little bit of liquid to it and knead. Knead more to get a nice soft and smooth dough.
For the filling you can add anything you want. Kentucky fried chicken, a fish Pattie, a veggie Pattie, baked tofu or anything you wish with your flavours. Here I used some ground pork for my Pattie and added extra cayenne pepper powder for extra kick. I love when there is some spicy flavour in my Pattie. This is just a classic burger with more flavours.

1.mix 8g brewer’s yeast with 14g brown sugar and 25ml lukewarm fresh milk.
2.into a large mixing bowl add 400g flour, 1 beaten egg and yeast mixture and mix using a fork. If you have a stand mixture you are totally free to use it.
3.now start to add fresh milk. For me it was nearly about 220ml. Add little at a time and make the dough. But after adding 220ml fresh milk my dough was little more sticky so added more 3tbs flour to the dough. BE CAREFUL when you add liquid all the time. If the dough is too sticky add more flour, if the dough is more dry add some liquid.
4.add 12g salt to the dough and knead more 2-3 minutes.
5.add 40g butter in room temperature to the dough and start to knead more. Dough look sticky at the beginning but keep kneading it on the working board at least 10-14 minutes. Sprinkle some flour over the working board if needed and knead.
6.place the dough in a bowl and cover with a cling wrap or damp cloth and leave it to rise about 120-150 minutes. I always prefer to use my oven SWITCHED OFF.
7.after pass 120 minutes you’ll see dough has been double in size. Give it a punch to release the air inside. Transfer it to the working board, sprinkle some flour and start to knead more 5 minutes.
8.here I divided my dough into 6 small doughs, one is around 120-130g. shape it into a ball.
9.prepare a baking sheet pan with parchment paper and place the dough balls on it. Cover with a damp towel and leave it to proof more 30 minutes.
10.meantime pre heat your oven into 200’C about 10 minutes and beat 1 egg yolk in a small mixing bowl.
11.after pass 30 minutes, egg wash your burger buns and sprinkle some sesame seeds on top.
12.bake in the pre heated oven in 180’C about 15-18 minutes or until buns are golden.
13.ASA take out from the oven your burger buns, cover with the kitchen towel and let them cool completely. This makes your buns more soft.
14.if you don’t use them on the same day you baked or if you have some extra, halved it and freeze in a zip lock bag. Take out from the freezer, thaw them completely and toast in the well heated pan with touch of butter.

15.i got about 670g ground meat, added some salt, ground pepper and cayenne pepper powder and mixed well for my burger Pattie. One Pattie was around 110g. Place them on a well heated pan and cook both sides until completely cooked. At the last minute place some cheese slices over the burger Pattie and cover with a lid. Let the cheese melt and fire off.
16.spread good amount of mayo in the one half of the burger bun, some lettuce, sliced tomatoes, burger Pattie and close with the other half of the burger bun.
