BAKED FISH PATTIES

 

Savoury patties are mostly welcome in Sri Lankan snack tray, party table and many more other occasions. They are mostly filled with canned fish and veggies almost all the time. if you are craving for some patties, you can find them from street vendors who sell deep fried short eats in every corner of the island and Sri Lanka got uncountable numbers of pastry shops. All those are filled with all kinds of short eats. But mostly we people do fried patties instead of baked version. though deep fried version is more crispier and tastier than baked version I always goes with this baked version. Because I always love to eat healthy as much as I can. 

Couple of days ago I was having a chat with Amma and she was making some fish patties for evening tea time. Mostly she makes a good batch at a time and lightly fry, just a bout 30 seconds and she freeze those for further usage. She is always deep frying her fish patties. Since that I was craving for some too. As how I got some leftover foods in my refrigerator I was awaited until they get over. So here finally I baked some fish patties to enjoy a good cup of coffee. 

Have already shared one patties recipe in my blog. It is all about chicken filling. And for the dough added some eggs also. But this time I did the dough without an egg. dough was still good and perfect. With my fish filling it turn out more delicious. I promise I won’t introduce any other savoury patties recipe in my blog. These two with chicken and fish will save your party table. 

By the way, you are totally free to deep fry these. Just do the patties and deep fry until golden brown. Place on the paper towel to absorb the excess oil and serve. If you got more patties, just deep fry about 30 seconds or less and place in a airtight container and freeze up-to 2-3 weeks even. Whenever you are ready to eat, thawed them and deep fry until golden brown. 

1.into a large mixing bowl add 250g flour with 1/4tsp salt and 50g cold butter, gated. Mix all by your hand and add cold water little at a time. For me it was nearly about 110ml cold water. Knead about 10 minutes until you have a soft and smooth dough. Wrap it with a cling wrap and place in the refrigerator about 1h. 

2.meantime prepare your filling. Peel and wash 250g potatoes and boil. Once they are boiled drain the water and mash using a fork and leave aside. 

3.peel and wash 100g carrot and grate using a box grater and lave aside. 

3.open 2 canned of tuna, drain out all the water/oil and leave aside. 

4.chop 2 garlic cloves, 5-6 curry leaves, 2 green chillies finely. I used one red chillies and it is super hot. 

5.heat a pan with 3tbs oil and heat up. Add all the chopped garlic, curry leaves and chillies. Let the aromas fry about a minute and add spices. Here I used 2tbs dried chilli flakes, 1/4tsp of each turmeric and pepper powder along with salt. Cook about a minute while mixing with aromas. 

6.add tuna, mashed potatoes and grated carrot to the pan and cook about 5 minutes in medium heat while mixing. And fire off. Filling is ready. 

7.take out the dough from the refrigerator and halved it. wrap the other half with the cling wrap and leave it in the refrigerator. 

8.Sprinkle some flour over the working board and flatten the remaining  part of the dough using a dough roller. Cut round disk from the rolled dough. I used my pastry cutter, if you have a Pattie cutter it is perfect. If not you can use a big water glass to cut the disks. 

9.fill the disk with curry and close the disk into half. Seal the edges with finger tips and using a fork tight the edges well. 

10.place all the patties over the baking tray prepared with a parchment paper and meantime pre heat your oven up to 200’C.

11.beat an egg well using a fork in a small mixing bowl. Egg wash all the patties using a kitchen brush and bake in the pre heated oven in 200’C about 25-30 minutes or until brown. 

12.serve when it is still hot with a cup of tea or coffee.
