ARGENTINE RED SHRIPM COUSCOUS

This super simple and delicious Argentine Red Shrimp couscous is just fantastic. In my instagram you may noticed that I cook couscous mostly in my kitchen. Hell yeah..!! We all love couscous. I never get bored with this meal. So easy to cook and I can eat a whole pack alone. 

Here I used some argentine red shrimps, they are large in size, but you could substitute with small prawns also. 

The main thing that you have know when you cook couscous is the right amount of water. This is not like rice. You cannot wash several times and cook with 2:1 of rice and water, like how you cook your rice. and not even like pasta. You cannot add into a boiling water pot and drain. The main and the important point to remember is, it is alway 1:1 of couscous and water. If you get 200g couscous remember it is always 200ml water/broth. if you prefer can use any kind of broth instead of water. it is more rich in flavours.

And the other important thing is you don’t want to cook your couscous in flame. Just heat water/broth, bring it to boil and add the couscous to it. Give a quick stir and cover with a lid. Fire off and let it cook in steam around 5-7 minutes or always remember to read the package instructions.because time may be vary from brand to brand and the size of your grains. 

Some are used to add few drops of oil to the boiling water before add couscous. Because it helps to fluff your couscous nicely. But I usually don’t, my couscous always fluff nicely but you are totally free to add few drops of oil to the boiling water. 

1.heat a pan with 2tbs of olive oil and finely chopped 3 garlic cloves. Fry until fragrant. 

2.add salt and 1/2tsp of each chilli powder, coriander powder and cumin powder. Mix with with garlic. 

3.add 2tbs tomato concentrate and 10-15 chopped cherry tomatoes to the pan and cook in low heat 2 minutes. 

4.at last take off the skin and head of 500g Argentine red shrimps, I left the tail and deveined, wash well and add to the pan. Mix with tomatoes and spices and slow cook about 5-7 minutes. 

5.meantime add 500ml water to another pot with pinch of salt and bring it to boil. 

6.add 500g raw couscous to the boiling water and give it a quick good stir, fire off and cover the pot with a lid and let your couscous cook in steam about 5-6 minutes. 

7.after about 5-6 minuets you’ll see, your couscous is already cooked. Fluff them using a fork. 

8.finally add the cooked couscous and finely chopped parsley to the shrimp curry and mix well. Serve with lemon slice.
