
Looking for a healthy wrap? Then what about this chickpea burrito?
Got a store bought burrito mix packet and this was sitting in my pantry for months now. Though I always wanted to use it, every time I forget. And finally mixed it with some chickpeas and did some healthy burritos. Great idea for meal prep too.
Fill your burrito with this chickpeas and any other veggies you prefer. I used whatever I had. Can add guacamole, avocado slices, cucumber, lettuce, tomatoes or any other veggies.
And don’t worry if you don’t have any burrito mix like this. use some spices you have in your kitchen. instead of this mix add spices and herbs like dry thyme and rosemary, onion and garlic powder, coriander powder, cumin powder, chilli powder, paprika. all of these or some of these on your choices.

1.drain all the water from 1 canned chickpeas and place in a sieve, wash well through cold running water. Keep aside to leave the excess water.
2.heat a pan on medium heat and add 2tbs olive oil, add finely sliced 1 medium onion, sliced 2 garlic cloves and sliced 1 large red bell pepper. Cook in medium heat about 5 minutes.
3.after 5 minutes add the chickpeas, 2tsp burrito spices and salt. Cook more 5 minutes in medium heat and fire off.
4.for me these was for 8 tortilla wraps. Fill the tortilla with any veggies you prefer and the salsa.
5.here I filled my burritos with purple cabbage, mix green leaves and chickpeas. Place all at one corner of the tortilla and wrap.
6.leftovers wrap using a aluminium foil/parchment paper store in a airtight container or zip lock bag, place in the refrigerator. can consume even in next day. take out from the refrigerator few hours before consume.
