
When summer sun shine in every corner, everyone is getting ready for GRILLED/BBQ parties. What if you can’t do some GRILLED/BBQ outside? Prepare your ribs and pan, stove on. Let’s do some indoor summer cooking.
This is my favourite way to do PORK RIBS, there may be thousands of recipes but I cannot get rid of this. And I got a pork rib curry version also. These ribs were marinated with some common spices that we all found in our everyday kitchen and slow cook with stock water/broth and finally ended up with a good touch of honey, this is what exactly tummy wants. The most delicious way to have your sticky ribs without using bbq or oven.
I’m not always fix with these spices. I add whatever I have at the moment. And luckily this time I had all these at home. Always remember, DO NOT add more salt when marinating. Because these ribs gonna cook in broth/stock water. It is already salted and we are adding some soya sauce too. So always keep it in mind. Rub all your ribs with your hands, it helps more to cooperate with spices.
If possible leave the ribs to marinate overnight. It gives more rich flavour to your ribs at the end. And by the way, even 30 minutes also enough for marinate if you are in a rush.
Add 1cup of stock water/broth at a time and let the ribs cook in very low heat until meat got pulled. Stock water/broth amount will differ from size and the meaty parts of your ribs. So don’t fix with my amount of liquid.
Other important thing is, always remember to turn your ribs in every 5 minutes. It is very important to cook all the four sides of the ribs evenly.
more slowly you cook, ended up with delicious, soft ribs. They gonna melt in your mouth
1.i got 1kg pork ribs, wash and dry with a paper towel and place in a bowl.
2.add 1tsp of each cayenne pepper powder and paprika powder, 1/2tsp chilli powder, 1tbsp vinegar, 2tsp soya sauce and 1/4tsp salt. Rub all the ribs with spices, cover the bowl with cling wrap and leave it to marinate at least 30 minutes Or overnight if possible.
3.heat a large nonstick pan or grill pan on high heat and place all the marinated ribs over the heated pan. Roast all the sides until nicely brown in colour, may takes around 6-9 minutes. Depend on the size of your ribs.
4.meantime heat around 2-3 cups of water with 1/2 stock cube. And make some stock water. Or you can use any kind of broth also.
5.once all the sides of the ribs are brown add finely sliced 2 garlic cloves and 2 inch size julienne ginger to the ribs.
6.and now add 1,1/2cups of stock water and lower the flame. Cook in very very low heat until meat of the ribs pulled and bones come out.
7.i used around 2cups of stock water for my ribs. This may be more or less, depend on size, meaty parts on your ribs. And I cooked my ribs in low heat around 70-75 minutes until all the stock water get cooked and meat was pulled. And remember to turn side by side of the ribs in every 5 minutes to cook all the sides evenly.
8.at the last minute drizzle 2tbs honey over the ribs and let them caramelise in high heat by turning upside down and Fire off.
9.serve with your favourite side dish.
And mashed potatoes are the best thing to pair with these slow cooked honey glazed ribs.
