
If you guys go through my blog, you guys know how much I love seafood. Seafood is everything to me.
Few weeks ago just we two celebrated hubby’s birthday and cooked this scallops pasta for lunch. Cooked scallops for the very first time and was too good with this tomato sauce made from fresh tomatoes.
Here I used fresh tagliatelle pasta. But simply you could substitute with any long pasta fresh or not.
1.i got 6 cleaned and washed scallops. Dry using a paper towel, lightly season with salt and pepper.
2.heat a pan on medium heat and add 2tbs olive oil. Once the oil is hot, place all the scallops and cook each side about 2 minutes and take away from the pan. Leave on a plate.
3.into the same pan add crushed 1 garlic clove and fry.
4.add thinly sliced 4 medium tomatoes to the pan. Cook in low heat until mushy. Then mash using a fork, let all the juice comes out. Season with salt and pepper. Cook in low heat about 3-4 minutes.
5.place all the pre cooked scallops and cook with tomatoes about 3-4 minutes.
6.meantime heat a pot of water, bring it to boil and add salt. Cook 200g fresh tagliatelle pasta and drain. Add directly to the sauce.
7.add handful of taggiasca olive and handful of freshly chopped parsley to the pan. Mix all well with pasta and sauce.
8.serve with some drops of raw EVO on cooked pasta.
